Meatball Cheese Savory Quick Bread

This quick bread I think is quite good for replacement if you like dinner rolls.

The original recipe is French Ham and Cheese, using olive. I replaced ham and olive with dried parsley and meatball, I also added sweet corn, and cheese chunks.


Ingredients :
2.5 cup All Purpose Flour (I used 1.5 cup Bread Flour and 1 cup Cake Flour)
2-1/4 tsp Baking Powder
1/2 tsp Fine Salt
1/4 tsp Baking Soda
1/4 tsp Freshly Ground Black Pepper
1-1/4 cup Shredded Cheese Gruyere Cheese (I used Chedar Cheese)
1-1/4 cup small-dice Cooked Ham (I used Meatballs)
1/4 cup small-dice Pitted Nicoise Olive ( I used sweet corn)
2 large Eggs
3/4 cup Whole Milk
4 tbsp Unsalted Butter, melted, plus some more for greasing the pan 

Combine and whisk flour, baking powder, baking soda, salt and pepper in a large bowl. 
Add Cheese, Ham (meatball), Olive (Corn), toss until pieces separated and all covered in flour.
Place Eggs, Milk and Melted Butter and whisk until smooth. 
Add the egg mixture to flour mixture, only until combine. It will be thick.
Put into the pan, bake for around 40 to 50 minutes until golden brown or toothpick inserted comes out clean. Place on a wire rack to cool, and turn it out of the pan and wait 30 minutes before cut & serve.

We added mayonnaise and indonesian sambal as we ate this. Delicious !!
